I don't know how nobody said this yet, but don't make your pancakes circular. Circle is literally the worst shape for edge to area ratio. Make a long squiggly shape with the batter and you'll get more edge.

OP it is unironically butter. When in doubt add butter, people who take photos of food don't try to make low calorie versions of anything. They try to make it look good. They probably took the end of a stick of butter and swirled it around the outside of the pancake.

Cook the pancakes, let them cool, and then reheat them in the oven/toaster oven. I do this with leftover pancakes because they get too mushy in the microwave but when they get baked they get crispy all over.

couple things. use lard or crisco instead of butter when frying and it will crisp more. also if you really like crispy then try out crepes. you could probably even just thin our your normal pancake batter a more and rest it in the fridge for a while. add baking soda before using it. you can get thinner pancakes or even crepes depending on how you do it.
