Tell them that vegetarianism and veganism are eating disorders and that to help them all the food you will be serving will have meat in it, and if they resist your help, they are on their own for eating and cooking.

I would make things that are mostly veggie but little tiny bits of meat scattered about like fried rice and maybe a pot pie so they can get used to adding meat back into their diet.

Mexican rice but with more shit in it.
>Rinse 2 cups of Basmati
>Saute diced onion in olive oil
>When it starts to brown add rice
>Stir rice to coat in oil
>If there isn't enough oil add another splash
>When rice starts to change colour add diced garlic and jalapenos and season with salt and pepper
>Fry for another few minutes
>When garlic is nice and fragrant and rice browning add 2 teaspoons of cumin, 1 teaspoon of ground coriander, and 1 teaspoon of smoked paprika
>Fry for a minute or 2 until spices are fragrant
>Pour over a can of Tomatoes that were blitzed in a blender or processor and chicken stock (you want 4 cups of liquid so check how much the tomatoes make up then sub the rest witch stock)
>Stir and cover then simmer for 15 to 20 minutes
>When liquid has evaporated remove from heat and let stand for 5 minutes
>After resting stir through the juice of a small lime, chopped coriander, a diced green capsicum, corn kernels and black beans

But seriously, a major factor is attitude, both theirs and yours. There are some vegetarians will who will refuse to eat at the same table as "carnists", at least without lecturing them the entire time. Such people might honestly be better off staying in a hotel and foraging for themselves. On the other hand, there actually are a few cool/reasonable vegetarians in this world--and they might be happy even to get a microwaved frozen veg dinner from the supermarket hippy aisle--if you're honest with them that you were uncertain and wanted to avoid offense.

It may be prudent to clarify what kind of "vegetarians" they really are. Are you sure that they're not vegan? Are they OK with dairy? Eggs? Will they eat fish (which may not be considered meat)? How about shellfish?

If you do want to try cooking, my suggestion is Taco/Burrito Night:

* Tortillas and hard shells
* Rice of your choice
* Refried beans (Goya's are vegan anyway, IIRC)
* Sauteed peppers & onions (cooked in oil)
* Guacamole (bonus points for homemade)
* Shredded cheese, sour cream (assuming that they are not vegan too)
* One or two salsas
* A few sauces (mild, medium, hot)
* For the normals: grilled or sauteed chicken chunks
* For the veggos: browned tofu cubes

Notice that the only last ingredient (the major protein) is a dividing factor; the majority of such a meal would still be a shared experience.

Or if you're a player flush with cash, just tell them to a find a suitable restaurant on Yelp and pick up the bill.
