how many of you use zest often?
I started using lemon zest for baked fish in addition to lemon juice

You have to use them before they start getting all mouldy and fucky. You can keep them in the fridge for a long time but the rind gets all soft and withers. My mum can't throw anything out so she pretty much always has frozen lemon/lime juice and frozen lemon zest, and usually frozen ginger and chilli's. Pretty much always prepared for a Thai curry.

I took the zestpill a year ago. Can't believe how much fucking flavour there is compared to juice. Today I made some Thai green curry but didn't have the kafir leaves. Read that actually substituting them with bay leaves and lime zest kinda emulates the taste - it actually does IMO. Might actually buy a Microplane since I get sick of cleaning the entire grater after using only one wall

Bruh. At first you are going to be like ... how did I ever live without my microplane? You'll be dancing around the kitchen with that thing, the honeymoon period in full swing. Later on when you remove the skin off your knuckles by simply looking at it you'll be in denial ... oh no it was me, I deserved it, I looked at it funny, I'm clumsy ... later on years down the line when it is still mercilessly removing big patches of skin which you then cover in citrus you'll still be making excuses for the creepy vamperic fuck. Imagine going back to a regular grater for hard cheese and nutmeg you'll be saying, gesticulating wildly with your bandaged stumps.
