Use peccorino and guanciale instead of parmesan and bacon, toast the pepper, sprinkle a bit of flour into the water for extra starch (helps prevent the egg from coagulating and the peccorino from clumping), use only the yolk and not the eggwhite

Pretty much this. Real bacon and fresh eggs. It's hard to find fresh pasta where I am at but it's not hard to make. I like it without cream but I usually add it for the kids.

from an italian making a fake carbonara for 2 people

>boil water
>chop half an union into small blocks, cut 2-3 cloves of garlic finely, and some parsley, put these 3 aside.
>break 2 eggs, only use the egg yolks. add about 150-200ml of cooking cream, add 60g of parmesan cheese.
>mix that shit in a bowl until consistent, season with pepper
>when water boils start cooking the pasta (300g spaghetti) 10 minutes
>also start frying bacon strips.

- Boil Pasta.
- Heat pan and cook either, Bacon, Guanciale, or pancetta.
- Depending on the number of people eating your Carbonara will tell you how many eggs to use, You will use 1 full egg + The number of people eating in egg yolks:
- Ex: 1 Person eating: 1 full egg + 1 egg yolk
- Ex: 2 people eating: 1 full egg + 2 egg yolk
- etc..
- After picking the correct amount of eggs you want wisk them in a bowl and combine them with you preferred cheese either Pecorino Romano, or Parmesan cheese. Also add in some black pepper.
- Now at this point you have your noodles cooking, your meat cooking, and you egg/cheese mixture made up. Once you your noodles are finished turn them off, and turn down the heat on your pan to low, throw the noodles into the pan with your cooked meat(The pan should have some of the cooked fat in the pan, however if you are using bacon or pancetta you can have a LOT of fat, dump some out or abosrb some of it with a paper towel before adding the noodles) then have a spatula ready and add in the egg/cheese mixture, and mix together the noodles, egg/cheese mixture, and meat of choice then server.
- The biggest problem with carbonara is making sure you do NOT cook the eggs and make scrambled eggs, you want the egg mixture to be creamy consistency.
