Fucking love onion!
Red onion over white onion though.
I'm currently pickling some banging purple shallots with Carolina Reaper.

My cousin, when she was a little girl, would call everything she didn't like "mushy".
Liver and onions? It's too mushy!
Something actually soft yet icky? It's too mushy!
Fish with bones in it? It's too mushy!

Baby cucumber and purple shallots.
Distilled pickling vinegar.
Dill.
Black peppercorns.
Mustard seeds.
2 Carolina Reapers in each jar.

Been pickling for about a month now, not opening the jars till Christmas Day.

I hate onions unless they're well cooked.
Call me a baby, but I can't stomach onions until they've been cooked to the point where their cell structure has been suitably destroyed.

Like, I LOVE using onions as a flavoring agent for most of my dishes, but I need to first fry them a good bit before adding the other vegetables.
Or, if its for a burger, have the onions deep fried as onion straws first.
