Guess I'll start. What kind of fish do you prefer cooking, and how do you prefer to cook it? For me, it's a nice supple cod baked in garlic butter with a side of lemon for that zesty juice. I suppose it would be a bit sensitive to ask if you guys have gone fishing recently, considering the pandemic.

I like Trevally. It's well priced and it's red meat and meaty. I like to dust in seasoned flour, dip in egg, then roll in panko breadcrumbs. Then fry in olive oil and butter, season with lemon pepper then roll up in a wrap with some saladings and some tartare.
If I don't want to go through all the effort I will just dust in flour and fry in butter and squeeze lemon over top and eat with boiled potatoes mixed with butter and parsley and a salad.
If I have smoked fish I make smoked fish pie.
>Saute onion and garlic
>Add smoked fish and whatever veg you want
>Fresh parsley
>Add some flour and cook
>Then add some nutmeg and milk to make a white sauce
>Stir through chopped boiled eggs
>Pour into oven dish
>Top with mashed potato and grated cheese
>Bake
I usually like to serve it on rice that's steamed with tumeric and cumin seeds.

Haddock. It's widely used in Scotland, but not the rest of the UK. Fish and chip shops use it instead of cod like you would see in England. Nearly any situation you could use cod, use haddock instead and you will improve the dish, except maybe if you were serving with a cheese sauce. It's pure white and wonderfully wholesome and filling. Additionally, if you don't like seafood that is too "fishy", give haddock a try and you won't be disappointed.

It's fresh-caught Atlantic whiting for me. Catch a bunch every time I'm in SC. Fry it, grill it, bake it, pan-fried. It's good every way you cook it. I love boiling the heads for some fish broth and sucking out their tiny, buttery brains.

OP, tonight I will be eating some herb crusted salmon cuts with dill, thyme, lemon zest and black pepper.
Sear in pan, baste with a little butter, into oven for 10-15 minutes. Glorious. One of my favorite dinners in rotation now. Just do the above salmon + 2 veg sides.
Fishing is great, but I am truthfully a city cuck without much experience.

I'm actually not a fan of fish, I can eat it just fine but flavor and texture wise it's kinda whatever, simply not to my taste.
But fuck me sideways I love cooking fish, poached, grilled, baked I don't fucking care. The smell the way it crisps, fish is just very satisfying to cook as a sensory experience.
My favorite seafood to cook is mussels. I hate them, they're gross and like 10% of what you're eating is poop, but in my chef days I was on an island known for its "farmed that morning" levels of fresh mussels.
There was this recipe that was fucking wonderful

>pad butter
> salt pepper
>fresh parsley sprig
>garlic
>honey
>spicy Dijon mustard
>heat till you develop a very pretty brownish gold fond
>half pint of heffiwiesen beer
>keep on heat til done
It made this fucking gorgeous golden and onyx display that made me wish I liked them at all.
Looked similar to pic related, but a deep brown gold and more swimming in the broth

Can't for the life of me remember the mustard, but I remember it was local to the island.
Mustard, honey and garlic were roughly 1:1:1 at a tbs each I think. But I was taught this on a line where the measuring was to pinch the garlic up in your fingers and eyeball it and the other ingredients, so fudging a bit it won't cause anything too detrimental.
