Controls heat and humidity. Better ones actually have computers, such as Zojirushi's "fuzzy logic" models, that can make minute adjustments based upon readings of temperature and moisture around the cooking container. It is a lot more forgiving than a regular pot on a stove top. You can also use it to make porridge, polenta, oatmeal or bread so it isn't a unitasker either.

Most cookers above $50 are computerized (microcontroller-driven) these days.
I don't think the cheap ones can sense humidity though, and the fancy ones control pressure with a pressure valve.
For humidity control there's just the vent.

No one has a Tatung? These things should still be made in Taiwan and they last forever. I know of rice cookers brought to the US in the 1960s, used daily, and still work. They're your basic rice cooker but super reliable.
