Why does my fried rice always end up oily as fuck. I tried only using the bare minimum by cutting back on oil and only ended up adding little by little when stuff started sticking to the pan and even then I tried scrapping it off without it before, BUT it still ends up oily. After I've eaten it there's always this fucking puddle of oil on my plate. Enlighten me /ck/ what am I doing wrong?

maybe you're adding the oil too late? adding the oil AS you're cooking might cause this. try mixing the oil with the cold rice and egg before you even start heating it, as it fries it should become fluffy and not oily.

Sounds like your using a shitty pan. I make fried rice all the time. The only oil I add imounts to lessa than a tablespoon and it's to give the veg and protein a light browning. I use a non-stick pan.

My rice is never really oily
Use enough oil to fry the onions, but they shouldn't be swimming in a pool of oil.
Add your other ingredients, seasoning as you go along.
Once your veg and other stuff taste good toss in the rice.
Make sure your hob isn't too hot, maybe that's causing the rice to stick.

unpleasant 'oilyness' is typically an oil + water emulsion, not oil itself
it's caused most of the time by too low heat. Same with deep frying stuff.

the issue is your heat isn't high enough so the water in your food isn't evaporating

I stopped really being into DBZ after it turned out that the first episodes of Super were stretched out retellings of the two previous movies. So after a few episodes I noped out and haven't gotten back into it the franchise since.
