I've been enjoying some brazillian coffee aged in a bourbon barrel from a local place that my mom found. I've liked that sort of thing since happy mug did a series of small batches aged in various alcohol barrels. It's been a while since I've had any like that so I was glad to get another.
I broke my french press the other day but had a spare lying around so I'm all good.

Have been testing a new Ethiopian. My third batch is a win. First attempt was at a city roast, which was fruity, but not overwhelmingly so. Some berries going on, some other kind of fruits I'm not capable of isolating. A faint whiff of florals. There was an annoying hint of herbal and anise which kind of dragged down the lightness. Felt...unfull. Not rounded.

Second batch I roasted to what I believe is something between a city and full city. I'm always scared of overroasting anything delicate. The rando fruits toned down. I picked up a hint of blueberry. The anise flavor at city began to be replaced by chocolate. Like a semi-sweet chocolate.

The thrid batch at full city completely removed the licorice-like taste, and the blueberry is much more prominant. Full on 70% dark chocolate covered blueberries. Fucking fantastic. Somehow very well-rounded now, clean finish. This is my lovely Christmas coffee.

I googled this extensively. You can determine the approximate caffeine content of a cup of coffee based on the amount of coffee grounds you use. The 6 cup Bialetti can hold about 20g of coffee.

Based on what I read this can produce like 110-180mg of caffeine, or about the equivalent or one or two cups. This varies based on the grind and beans that you use (as well as the brewing method but moka pots brew the same way mostly).

The maximum (medically defined) "safe" level of caffeine is around 300mg a day for a healthy adult. Having 2 6 cups a day is probably okay, but it is nearing the higher levels of caffeine consumption.

and how much for a grinder that'll give you consistency in your espresso? Couple of hundred depending on what you decide to go for. Then you gotta get your coffee and be prepared to waste a small/moderate amount of it too for figuring out how much pressure to apply and your grind and dose.
If you end up going with something that uses pressurised steam, the same more or less applies but now you need to factor in cleaning supplies(Because it's very fucking important. Pic related) and money you'll spend on learning to froth milk and practice latte art(If that's your thing)
The cost can quickly tick up. If you drink espresso every day and will use it every day at home, then go for it. It's even better when you know how to use one too.
The last thing you want is for it to end up next to your nutri-bullet and George Foreman grill being unused and not getting you moneys worth from your investment.

Literally just work out how many cups you get from your cafetiere, chuck in about 15g per cup of coarse ground coffee leave it a few minutes. Press. If it's too weak, use more coffee next time.
And don't use boiling water, give it a minute or so after boiling to cool down a bit

I've decided to up my brew game and get myself a moka pot, cause I love me a small and strong cuppa. Any purchase tips? I've got an induction stove so my choices are limited. I've been looking at the 2-cup Bialetti Venus (picrel).

Also, what should I look for in beans for a moka? I gather medium-light roasts are the common recommendation.

Yes they do go higher than 100c, i roast in excess of 200c daily, however, green beans, if you aren't a complete tard, you'd probably realise that raw beans have a higher moisture content than roasted beans, hence they burn far more easily.

Yes and therefore lighter roasts wouldn't burn anyways? But the point is that boiling water doesn't burn things, it simply extracts more. The bitterness is already in the coffee and a brew that's too hot simply brings it out. This is not such a problem with light roasts because they aren't as bitter to begin with.

You don't use boiling water to necessarily mellow acidity, but rather to extract better. Light roasts need this because they're generally harder to extract.

Get a baletti, but I recommend 3 cup. 3 cup is about the size of a double shot, maybe slightly bigger. Also try to get an Italian market import. They tend to be nicer. I like the dama nuova look.

As for beans I personally find very light beans to come out like shit and overly acidic. Don't get beans with a white center vien. Get ones that are at least light toasted brown all over like aldis breakfast blend. Also if you don't have a grinder, I like to buy whole bean and grind at grocery coffee grinders. That way it's the right grind size since you want it finer than most coffee bags are, but a little less fine than brick coffee.

Silver skin. It's the innermost layer of the coffee cherry surrounding the seed found under the parchemnt. AKA: chaff. It's very thin and papery, and flies all over the place during roasting. Wet-processed coffees usually remove more of it overall than dry-processed coffees, although this is not always the case. The amount of silver skin left inside the seed's crevice has to do with roast level and seed shape. The darker the roast, the more likely the last little bit of chaff escapes the seed cleft, however, larger, denser beans sometimes just do not let go of the crack chaff because of the shape. It it tasteless and does not affect most brewing methods with the exception of espresso. It can be removed via sifting very fine grinds. I have a wet-procesed coffee right now that retains that little bit of chaff even at a full city or vienna, and an intensely fruited dry-process that has almost none after cinnamon, but both are very good coffees. It's a silly thing to judge a coffee by.

Its not that beans with a silver chaff are bad; I've enjoyed the aldis donut blend in my french press which is very light and has a sliver chaff. That anon was asking for moka pot coffee recommendations. In my 2 year experience very light coffee that has a silver chaff come out unappealing and so acidic sometimes it causes my half&half to curdle a bit. Imo beans that are at least cinnamon to medium roasted are best in a moka pot. I use my French press for lighter coffees.

Personally I took a bread machine and a heat gun. I had to put the temp sensor outside of the case of the unit since it caused an overheat error. It works damn good. I do it all by sound and sight. Haven't had a bad batch yet. I basically wait til the end of the first crack stage and dump it between two colanders to winnow the chaff off. Then I put it on a cookie sheet until it's cooled. Stored for a couple days then ground at each serving.

I’ve been trying ratios between 1:14 - 1:16, medium grind, water just off the boil. Brew time is a little less than 3 minutes for chemex doing continuous pour like Hoffman’s video says.

I recommend using freshly boiled water for the moka pot before putting it on top of the stove. They say it tastes better this way, others say it doesn't matter if you start from room temp water, but for me, I'm just impatient. I manually grind the beans while the water is heating on a kettle. By the time the grinds are done, the water is most likely near boiling. I'll then be able to brew quicker on the stove top.
Don't fall for the seasoning meme. Disassemble (including the gaskets) and wash your moka pot every after use. The coffee oils will get burnt and will turn rancid, which will make your succeeding brews worse. Also when you store the moka pot, make sure it's slightly loosened so that your gasket doesn't get deformed.
Lastly, if you have a french press or a frother of some sort, have fun making milk drinks with it.

I remembered seeing Socratic did a particle distribution on Comandante, EK43, and Kinu and posted the result on their Instagram. Referencing on those, the Timemore new burrs don't really perform as well. The Kinu and Comandante have the highest peak at 20%+ while the Timemore peaks at 15%. So this means that the shape of the graph for the Kinu and Comandante has steeper slope while the Timemore is a lot less steep and more spread out, making the grinds are more uneven.
