I cook the chili without beans, and add beans on top when I serve it. The actual important ingredient is the chili peppers. Chili should be made with whole dried chilies, rehydrated and blended into a paste. Otherwise it's just some random spicy stew.

A traditional chili has no beans. It also has no corn, tomatoes, beef, or chilies. It is made from shredded tobacco. And instead of eating it I'm a bowl, you wrap it in a tobacco leaf and smoke it.

I don't think beans really add or detract from chili. I don't like the texture of beans, so I enjoy chili without beans. However, many people enjoy the added protein and (maybe?) the flavor.

A chilli can have no meat and still be chilli if it has beans.
But remove the beans and it stops being chilli.
Its just poor stew at that point.
