I don't really see myself as a weeb, but I grew up eating a lot of Japanese food and it's something I'm pretty familiar with cooking. I also like that dashi is super easy to make and Japanese staples tend to be really shelf-stable. I'm generally just a huge fan of fermented flavors and pickled things, so east Asian cuisines have the most appeal to me.

I live in California, my area traditionally had a pretty sizeable Japanese population. My parents didn't cook it, but it was the most common type of restaurant food that I ate growing up. Also my grandfather was a weeb so Japanese culture was sort of indirectly a part of my upbringing. My mom is a bad cook so most of the western food I ate kinda sucked, but my dad made a lot of east Asian foods and did them well, so that's kinda what I gravitate towards.

Cooked tomatoes are really tasty, anon. Tomatoes can't really "burn" since they're so full of moisture, but the heavy browning (maillard reaction) that you see here works great with tomatoes because they are acidic and a little sweet naturally, and both of these complement and contrast well with the deep and bold taste of maillard-derived flavors.
