I'm chinese and like making a simple pork mince stew with potato sometimes. Basically cook onion and garlic, add pork mince with oyster sauce, soy sauces, salt, white pepper, add potato, turn down heat and close lid. 15 to 20 mins. Then thicken with corn starch.

Originally it contains only fresh minced pork of #1 quality, salt and pepper and some onion rings or slices on top. Must be consumed on the day of preparati-on. Google for Mettbrötchen.

Similar to beefsteak Tatar but with less ingredients.

Butchers offer another version which could be stored in the fridge for some days. Onion is minced finely and mixed to the meat. Instead of normal salt you use cu-ring salt with 5% nitrite. This keeps the meat red and protects some nasty bacteria from growing too fast. Filled in plastic tubes.

If my ground beef is frozen already? I'll brown it in crumbles, and into the following recipes:
-Chile con carne, maybe leftovers into a taco salad, chili-cheese baked potato or on top of a hot dog. Freezes well, and even better the next day.
-Cajun dirty rice (mix or from scratch). I should also have a chicken liver to toss into the crumbles.
-Texmex style american tacos, just have to season it how I wish, and crisp up my shells or make some tostadas, salsa, cheese, lettuce, sour cream. Rice and beans on the side optional.
-Cuban Picadillo, with lots of olives, capers, dates, raisins, wine, saffron and simmered. Served with rice, maduro plantains, mmm. (Leftover meat can be stuffed into puffed pastry pasteles, stuffed in mashed potatoes and deep fried papa rellenos, and it refreezes and reheats well in a work lunch).
Sloppy Joes, from Manwich Bold can or from scratch. I like it on butter toasted kaiser rolls, sharp cheddar, and scattering of fritos. While it simmers, it's homemade oven fries. This is on my covid rotation prolly once a month now.
I don't mind a "hamburger helper" style of beefaroni or cheeseburger kind of pasta casserole, but I never make them really than just for myself occasionally. I wouldn't use a boxed mix, though, too salty and noodles are too flimsy.

Fresh ground beef:
Pasta sauce for lasagna.
Burgers of various types such as the cuban half chorizo frita burger, american bacon-y chili sauce glazed or italian seasoned meatloaves or mini loaves, italian meatballs or basic breadcrumbs to BBQ glaze, ie american seasoned for like a meatball sub, swedish meatballs seasoned (half pork/veal, half ground beef) lots of mushrooms and creams in the pan to simmer, stuffed peppers or cabbage rolls, chargrilled kibbeh, or kofta (helps to add in a bit of lamb) or greek seasoned beef w/ lots of parsley, lemon and garlic style beef meat patties to park in a pita with some fresh tzatziki or tahini and lots of cucumber and taboulleh salads.

Mince and tatties is quite nice. You can throw it in just about any pie, too. American-style goulash goes well with some minced meat, and a lot of casseroles go well with it too. Tacos and burritos as well. You can make all sorts of minces and scrambles with it.

mix 1 egg yolk with 50/50 beef and pork mince. salt and pepper.
Toast couple of slices of bread.
spread mix on top of toast.
Broil in oven for 15-20minutes.
If you feel frisky, shred some cheese on top before broiling.

Dan Dan noodles, one-pot pasta dishes (look up Chef John's orecchiette dish or his sausage orzo), nachos or tacos, Loco Moco, American goulash.

Also, it's a bit of a hassle to make if you're not used to working with dough at home, but make some Runzas. Seasoned beef, onions, garlic, and cabbage baked into a roll, it's so damn good. Plus you can add stuff like jalapenos, cheese, and mushrooms, and they're also pretty good dipped into a spicy mustard.
