Let me introduce you to the best fast food in the world, Pataouga (a type of peinirli). It essentially is like calzone pizza, but filled with ham, cheese, tomato sauce, mayonese and little pieces of bacon (a combination that is known as Ougareza in Greece).

there's a few mayo based "salads" or spreads such as "Hungarian" as the OP mentioned which has Ham and Paprika, "Gardener" with shredded carrots and parsnip and "Russian" with cubed potatoes carrots and peas. You might see those seldomly in Greek tables, usually bought off the store rather than made fresh, or in fast food places. Mayo is also used in some classic cookbooks, though it's definitely not a big part of Greek food culture and is rarely made at home.

living in greece is comfy. many restaurants serve food just like it was cooked at home. however its very hard to get food besides greek. Theres indian and some chinese but its not very good. absolutely no ramen

Im stuck here because long story we came here for medical tourism/tourism and the medical stuff is taking months longer than I expected. We got a visa extension just in time to help "flatten the curve" so we are stuck here in Athens wandering around and eating. My budget is pretty high because I hired someone to manage my business back home and somehow it's busy because of coof19.

I rented an apartment and now I eat and walk around aimlessly for hours every day. It was better before the lockdown because I could just chill and meze with the wife when real restaurants were open, but now it's efood or cooking ourselves. Unfortunately our apartment only has rudimentary kitchen stuff so we can't just dive in and cook like back home. Greece is a solid 10/10 though. I'm going to buy a golden visa after this.

Greek Lent forbids meat and any animal products like milk and eggs. Also, bony fish with the exception of a few days. Crustaceans, cephalopods and molluscs are always allowed though.
It used to be that everyone would observe the lent religiously. Nowadays most people only observe the first day and the last week, to keep with tradition, or just don't observe it at all.
Of course recipes with vegetables are often made in fasting occasions, but they are nice to eat anytime the required vegetables are in season, with a piece of feta, some olives and a slice of bread.

May be hard to find or make, but grape leaves stuffed with rice and fresh herbs, made the night before with some lemon juice and chilled, are a must. I also love octopus, shrimps saganaki, tigania (bekri meze), revithada (chickpea stew) etc.
Otherwise, since I don't know what you're working with, Greek food is mostly about simple preparation, fresh ingredients and good olive oil, anything you can make in this context using common ingredients in Greece should work.
