Also, it's easy, you're overcooking your bird. Pink coloration is not undercooked, temperature matters only. If you get discolored fluid, it could be from the bones. No need to panic. Also to hasten this whole thing, feel free to dislocate or break them at the joint. Yes it helps.

I was assuming OP is an idiot, and doesn't have a big enough bowl/sink to thaw a turkey that way. I work with a guy who keeps putting 50 pound bags of sub-primals and chickens in the veg sink full of cold water to "get it thawing". I keep telling him that it's not doing anything if the water isn't running, but some people are just stupid.

The fact that it's running above freezing but below danger zone water over something is great. It thaws shit so fast and helps keep the meat relatively cool with less bacteria being developed on the surface as it's perpetually being rinsed.

I don't like doing it to ground beef unless I'm 250% sure that shit is sealed. Water ruins ground meat. And fuck doing it to any fish that won't hold up to deep-frying or grilling.

Fuck that. The place that I was proudest to work at would either schedule me around, or call me in, when they would get salmon in. They would only freeze it after it had been cleaned. I didn't have to do much, it was usually just 2-3 large cases of sides and they didn't like seeing waste, pinbones, uneven looking fillets, roughed up surfaces, etc. I could pound them out in no time at all, get some paperwork done, and see what else was needed to complete a 4 hour shift; or try to find a reason to be for 8.

It's the same where I work, but we individually wrap and freeze them when the order comes in, and usually pull however many we think we'll need from the freezer and move it to the walk-in the day before we need it, and then the next morning go over it for pin bones, clean it up, and portion it for use. Just occasionally we sell a ton of salmon and have to get some thawing in the middle of a busy Friday or whatever. Every other place I've worked has been a lot more predictable, and this place is on the smaller side. We usually have 25-30 portions of salmon on a given night, but other things we'll only prep 8 or 10, and then we'll get a random table that orders 5 of one of those things and all of a sudden (when we've been selling 1 or 2 a day for the past week) and we're scrambling to prep more in the middle of the rush.

what i do with turkey (for christmas as i am bong) is separate the crown from the legs. then you can braise the legs on the stovetop and cook the crown gently in a low oven, take them both out to rest and blast them in a hot oven for twenty minutes before serving to make them crisp. it still looks good but white and dark meat are both cooked correctly unlike in a normal whole roast.

if you want to be really baller you could take the bones out of the legs, stuff and tie them so you get these ball-shaped sliceable things.

Brine the turkey first
While cooking it (other than in a fryer of course) take the time to baste it in it's own juices.
If you're oven baking then cook it breast side down. If you want that classic tan and crispy skin on the breast side then when you're done switch the over to broil and flip the turkey and broil it for a few minutes. Optionally you can rub some butter on it before the broil.
