It's good with all sorts of stews, as if it was rice but tastier. There are good salad recipes with it in (and a ton of herbs like mint and dill, plus olives and other ingredients I forget right now).

I usually make it as a side when I smoke/grill meat or something like that. I make the couscous with chicken stock instead of water, then add chopped tomatoes and green onions, and feta cheese (I refrigerate it before serving). Easy and delicious on warm days.

I like couscous. truely underappreciated pasta variant. You can even make sweet desserts with it. Cook in milk or water, grate an apple into it, cinnamon, optional nuts and dried fruit, top with honey. You're not aiming for a porridge consistency, it should still have a couscous texture, just sweet instead of savory.
If you got leftover couscous from the day before that was just cooked in salt water, not broth, you can just mix it with a bit of milk, honey, and cinnamon for a quick and ez breakfast. Apple, pear, pomegranate raisins, dates, nuts, even a dollop of yoghurt can all be added too.
