I like his veggie soup, because he just basically makes the argument that you boil some veggies and keep it simple.

But he really lost favor with me when I tried making his Chipotle-honey shrimp and it made a huge caramelized saucy mess that was a nightmare to clean. Also the fact that he tried to convince everyone that deep frying at home is a bad idea. I believed it until I came across Ethan Chlebowski and his counterargument about deep frying in a wok. Deep frying is one of my favorite cooking methods now, and I do it at least once a week. It's almost as easy as a stir-fry or saute once you've got the hang of it.

I mean Ragusea isn't wrong, deep frying at home can be really impractical for some people. It was for me when I tried to use a big thick-bottomed stockpot. So you make a good point that the equipment is a pre-requisite.

The counterargument to that, though, is that more should get woks and gas burners. I use an iwatani butane burner that I got for $2 at a yard sale, and it gets my oil up to deep fry temp in like a fucking minute.

you laugh, but I actually started making vegetable soups because that video made it seem easy. I made an ass of myself at least a couple times along the way, and now I do things a bit differently to my personal taste (usually I'll let the onions cook themselves down for a while to start, then dump in water + the rest of the veg instead of trying to soften the onions by boiling alone) but it was a decent low-barrier-to-entry resource to kickstart some kitchen-experimentation creativity. And dumb as it is, I actually do like the "pour in frozen peas after cutting heat" trick, because I wouldn't have thought of it but they do thaw immediately, adding very-very good nutrition and heartiness to an otherwise light soup, but without cooking that pea-soupy-flavor into the core DNA of the dish.

His 'interest' in food seems to revolve around optimisation of formulae (recipes) to reach the 'correct' methodology.
