Back in the day, nobody had refrigerators, and there were far too many ways for unscrupulous peddlers to sneak in rotten garbage to their offerings. Eat a steak well past it's prime, and yeah, you're definitely not gonna be feeling so hot. Eat decomposed seafood and instead of "not gonna be feeling so hot", you're gonna be absolutely crippled for a few days, or even fucking die depending on a lot of things. There's a reason they tell you to toss mussels that don't close on being agitated before you cook them. Also keep in mind the hordes of plebs were commonly supplementing their diet of rice and whatever vegetables they could acquire with... seafood, given the relative abundance and ease or acquirement compared to something like beef. And the hordes of plebs weren't really getting top shelf sashimi-grade tuna, everything was always pretty iffy in general.

How do you, Literal Who the peasant, know the shit you're being sold in some back alley market is fresh? Serving it still blinking is one way that is both beyond any suspicions and also relatively simple to accomplish. Because rotten seafood is so dangerous, you mostly see this "served alive" shit for frogs, squids, fish and the like pop up across China and Japan every once in a while. Why do they still do it? Because habits are hard to break, mostly. It's already been reduce to a weird gimmick in most of Japan, if China can stop being such a raging shithole in it's majority they're sure to follow.

The boiling dogs alive thing? Yeah, some Chinese actually just like the taste of rough, greasy meat riddled with nothing adrenaline. Some people just deserve rope, I suppose.

Here we just have meat packaged neatly at a supermarket, we don't see anything that would make us think of where that piece of meat came from and you never appreciate it versus in the east where you can see the animals alive before they die, where more body parts are eaten and where the head is often served.

Why? Just for color contrast? I'll admit that would make it more presentable. But it's not gonna change the taste... I like the little metal bowls because they're light, convenient, durable, stackable, and easy to clean. So I use those a good amount. It is not Lao Gan Ma by the way but rather a doubanjiang sauce for the beef and a soy-vinegar sauce for the vegetable.

Good suggestion on the pork floss, I should give that a try.
