I used to co-own a tater tot food truck. Tot Wheels. We would do things like nachos or poutine but replacing the chips/fries with tots. You can top them with anything you want they're just fried carbs. If you want to make them fancy without slathering them in toppings just pick some nice taters and make them yourself, double fry them in duck fat and salt them with a fancy meme salt.
