Where do I go if I want some beef wellington if I am in the USA?

I mean the USA is fuckin huge, can you be a bit more specific. Typically though you would want to find a steak house or supper club. These types of restaurants may have a wellington on the menu.

Also sometimes a "modern american" hip restaurant will put it on its menu ironically.

No I really do think they are being ironic, or cheeky, or whatever you want to call it.

It's like when they put a meat loaf on a menu at one of these places. It's supposed to be a tongue in cheek play on a stodgy old dish or something your mom's mom used to make. It's like they have a sign saying look at me I'm retro. Or that it's almost a joke that it is on the menu at a relatively upscale restaurant.

Use whatever phrasing you want. They are being cute with it by adding this 70s era Americana dish to their menu and they make sure you know they are very aware it's a dated dish. The special might even come with a harvey wallbanger or some shit. It's a gimmicky thing that's all I'm trying to say.

I always thought those specials were pretty normal. This is gastropubs we are talking about so I would expect varied dishes. I'd love to see meatloaf, tuna casserole a chicken ala king on a menu. Sometimes I do and it's not done on a fluke, its usually really good.

I'd associate beef wellington with a very meat focused higher end gastropub if it wasn't a white tablecloth restaurant.

But in a bad way? It's kind of a complex dish to perfect and if they pulled it off I would only give the chef respect and know that the other dishes in the restaurant are probably pretty good. Ive had escargot at an American restaurant before.
