Not having mold is a bonus.

I am a cheese noob and Murray's Dansk blue is the best I've had so far. It's still funky but it comes through in almost floral notes.

Dunno. The maker, ford farm, is from some area of Britain called Dorset. I imagine it's common around UK and maybe in Europe.
I found it at this supermarket chain that sells all kinds of delicacies from around the world, but I'm not from Europe or America. Cheese made with rennet isn't even really allowed here.

Any anons have tips on how to keep cheese from getting moldy in the fridge? I wash my hands thoroughly before handling but I can rarely get more than a week out of a block of cheese if it's not something really dry and hard. I've tried wrapping the blocks in paper and putting it in a plastic bag but it doesn't seem to help.

I feel like these are "nutty" to use a buzzword and this is my favorite kind. Blue and washed rind is fine.

Also I love fresh mozz and fresh goat cheese so any recs in that fields are good too.
