i was making home made mayo the other day and i noticed that it tastes so much different and its more oily than store bought mayo. i know home made always tastes slightly different but its like a whole new sauce. anyone else have this experience with sauces?

Industrial mayonnaise has fillers in and it's made with whole eggs, as opposed to egg yolks only. That may explain your question. I prefer homemade because I don't use (((soybean))) oil.

i just got a food processor a week ago so i wanted to try making stuff with it. i do think the first trial of home made mayo was better than industry mayo but im not sure its the soybean oil. its probably because of the egg yolks though. ive also seen that some mayos use corn syrup instead of vinegar so i want to try that as well.

You screwed it up and your emulsion was broken. It should be saucy and creamy, not oily.

perhaps that is what happened. it was saucy but it also had this residue. i think i added the oil too quickly or didnt add enough agents to keep the oil mixed with the egg in the food processor and stuff.

ohhhhhh yeah food processor mayo is notorious for being a poor emulsion

an electric hand mixer is better

I know exactly what you mean. Food processors are great for certain tasks but they don’t do good mayo imo

Every time I've tried making mayo it turns to be a sauce like consistency and I get a headache due to the amount of oil needed in the recipe. Needless to say, I much rather prefer other alternatives to spreads for a sandwich in regards to homemade stuff.

I know what you mean. I find an immersion blender makes mayonnaise very easily.

I usually use coddled (white slightly set) whole egg and canola oil when making mayo... a bit of cornstarch, and it's like a more flavourful version of Hellman's.

The only things I notice a huge change on is egg-based sauces (Hollandaise especially... packaged hollandaise is garbage), and curries. Patak's is a good base, but it's not the real deal.
