Sour Cream. do you pour off the liquid or stir it back in and am i the only one that notices a change in flavor after its been open for a few days. Is it going bad?

This squeeze tube is great for households that have no common sense...the kinds of people who cross contaminate everything with their dirty spoon. I think the mold first forms where contamination happened. These cross-contaminators are the people who always have toast crumbs in their jelly container or on top of their butter, or bits of peanut butter in the jelly jar, or double dip into the mayonnaise like bits of scary tuna fish in there, ick, or park a spoon right in the tub when placing it on the table, no consideration for the dirty handle which made hand contact, where people touch it, so that handle slides right into the tub.

I think, OP, you are supposed to leave the whey in there for the fact it has the live cultures too and may preserve the surface a bit, but no, I don't stir it back in nor do I consume it really. I might tip the remainder of it out when my tub gets about halfway done or nearly gone. I get that you can forget about it after your baked potatoes, but it freezes and unfreezes nicely from the coldest back of my fridge. It's great to cook with and I often stir it into a nice bean, spicy or a creamy soup, dollop on top and swirl it in. I will deglaze some meat, and then spoon it into the pan gravy if I want that tang. Use it to make biscuits or scones, can even just blend it into bisquick mix and drop your biscuits. Any recipe that uses dairy will just as easily use sour cream. So, mine doesn't really go bad. I might just use it for a quick single serving of dip with some items from my spice cabinet.

I pour the delicious, tangy whey right into my mouth. With an air gap, of course, so as not to introduce competing microbes. I never stir the sour cream in the jar because it is a thixotropic fluid, and sometimes you just want a thick dollop. You can always stir it in another bowl if you want it more fluid. I only extract sour cream from the jar with a clean spoon so as not to contaminate it with competing microbes. My sour cream never, ever tastes off or grows mold, even a month after opening it.

No, it's true. When agitated through the nozzle the sour cream becomes more fluid. This is not always desirable. I don't waste food. As an experiment I decided to cut open one of the squeeze packages to extract as much of the sour cream as I could. There are multiple crimps and folds at the nozzle end so it took a few minutes. With the plastic tubs, I can just use a spatula. Single-use plastic waste is a huge issue because it most of it eventually goes into the ocean. Enjoy your mantits, soyboy. The containers are actually great for mixing paints and solvents. Sometimes I use them to soak rusty car parts in penetrant.
