Anyone take to making their own sushi? It’s surprisingly easy and fun! Make a shrimp and a California roll. Came out delicious. Also a great way to impress your friends.

yeah I just use calrose, tuna salad, and seaweed sheets. I usually don't slice it and eat it in phallic form.

Are you me? I've also recently made masubi and it is by far one of the best dishes I've made. So simple but so fucking good. But yes, I make sushi when I'm feeling the need. I don't usually get sushi grade fish though. Too much of a hassle. Imitation crab, canned tuna, and shrimp is pretty much what I work with. Sometimes broiled eel from a can as well.

"Sushi grade" fish means it's been flash frozen to kill any bacteria/parasites in it making it safer for raw consumption. Don't just use raw fish.

I mean most of the countries force sellers to freeze their fish before selling and that kills parasiytes. Your normal house freezer is usually not cold enough but it should've been frozen previously, unless you're literally buying fish that just got caught.

I used to do it in a pot but it was often a bit too mushy and the kombu sometimes got a bit flaky. At one point I got a decent ricecooker and never looked back.
Rinse the rice a couple of times, cook it with a piece of kombu, prepare a dressing with pic related, when the rice is cooling down add the dressing and ventilate it so it cools as you mix it up using slicing movements so as to not crush the grains.
The dressing as it is is a bit too sweet if you use mirin though so I would cut the sugar in half.

Sushi grade is just a meme, it just means it was handled well and flash frozen for shipment. You might have a wholesale seafood distributor in your region who will do a will-call order for you if you want to get the same fish the sushi places around you use.

Personally, I only ever used Tuna raw, and it was perfect but I bought the good shit at the local distributor. Otherwise I stick to tempura shrimp rolls with tobiko, avocado and spicy surimi.

Sushi grade isn't a regulated term and is used for marketing. Any fish could be sold as 'sushi grade' with no repercussions. Doesn't mean anything
