their curry is just watered soup
ramen is just inferior version of authentic Chinese noodles

I'm trying to get into ramen this winter. I've got the recipe for pork belly down but I've been using broth base for the actual soup so far. I'm going to get a stock pot to try my hand at an actual pork shoyu after the holidays I think.

I made it according to Just One Cookbook. I use those precooked ramen noodles packed individually (not instant ones). For that one, I maybe cheated a bit on the broth using Knorr chicken stock and dashi. But the pork (chashu) is the real deal.

This one is miso ramen with bok choi and corn. I made it when I had friends over, so I made chicken broth from scratch.

Surely no one would ever do that.
In Japan, they always heat the mushrooms before eating them.

That's not common in ramen restaurants.
But you can often find it in Chinese restaurants and "michi no eki".

Next time you're in Japan, you should drive around and see what you can see.
