Isn't the method to make tamago kake gohan essentially the same thing as carbonara? Both dishes you mix in raw eggs to freshly cooked pasta or rice and everyone is fine with carbonara but some people are averse to the other one.

most people also think carbonara is made with cream.

I mean have you tried it?
I like tamago kake gohan, but the egg is straight up raw. The rice doesn't cook it, even if it's fresh done(which isn't strictly necessary for the dish). For a carbonara the egg is cooked, just not to the point where it's scrambled egg

>> No.14966363

>>14964282
With carbonara the egg white gets cooked by the heat of the pasta (you're supposed to toss the sauce in as soon as you turn off the heat).
I'm not sure about the japanese thing tho

No, the Japanese love raw eggs and want to eat raw eggs so they want some raw egg taste in their raw egg rice. They serve raw beaten egg on the side of certain dishes as a dipping sauce.

I'm looking for a bento box, it cant be pinku (that's Japanese for pink) or any girl color. It has to be of 2 or more kotoba (that's Japanese for 2 compartments) and has be be chibi (small) sized. And has to be really kawaii (cute). Also It has to be about 10-20 bux. And you have to post pics of it first (i want to make shure it's kawaii [cute]). And it would be nice if it came with matching chopstick holder (WITH chopsticks). OH! and it CANNOT have any cartoon pictures, or be made out of plastic. It has to be made of ceramic, or something like that. Also it would be nice if it was made in japan. and not in china or corea (Korea) or whatever. I have found a bento box similar to the one im describing in e-bay, but it was 1 kotoba, and i don't want my gohan (rice) to touch my other things (it can get wet and i would not like that, plus 2 compartments looks more kawaii)

No cream, the Pecorino Romano melts into the remaining noodle water and the egg, that's all.

This really. I usually do it with leftover rice so I heat a bowl of rice in a microwave to get the bowl as hot as possible then I drop the pre-whisked egg/soy sauce mix and stir to emulsify, after that I microwave it again at low power and 20s increments, stirring in between and making sure not overcook it, until it's like carbonara.
Perhaps reheating the rice in a pan and doing it carbonara style would be easier.

Short answer: no.

The rice just kinda heats the egg yolk, it does not denature the proteins.
