Made that america's test kitchen biscuit recipe (see pic)
Then made southern livings recipe (self rising flour, buttermilk, butter). Came out soft on bottom, and had the flavor of a saltine cracker. Very like, flourey kinda.

The self rising flour I found frozen in my parents freezer for God knows how long. Would that affect texture and taste?

North American recipes don't work correctly in the Southern Hemisphere.

Supposedly it's all about the flour. Learned how to pie crust, never learned how to biscuit. Also, just put the dough in a greased baking dish and cut the biscuits by scoring with a spatula while dough then break apart when done and paint the top with butter.
