Phó soup broth. What experience do you have making it? Im using two beef neck bones with charred onion and ginger, with coriander cloves star anise a cinnamon stick and fish sauce for flavor. Its simmering right now and needs a few hours for all the flavors and nutrients too leech out. I've already scraped the floating scum out. Any tips?

They can be hard to find in stores. And most powders us artificial beef flavor and have tons of MSG. Look for beef bone base instead. Its a condensed paste from beef bone

You need some bones with a good amount of beef. Throw in a nice piece of brisket, then use it later in the soup sliced.

I don't see any char on your veggies, that's very important for flavor.
