Seriously guys, what's the point of wasabi?
As a flavour enhancer you only need a couple of microgram of the stuff. Any more of that and it blunts your taste buds for days.

A knob of wasabi root costs $300-500 because it's an absolute pain in the ass to cultivate and can only be harvested every three years under very specific conditions.
It's rare to even get served real wasabi in Japan. If you're at the kind of sushi place where your bill is in the 100's of dollars then most of your bill would be for the tiny lunch of real wasabi you got mixed in with dyed horseradish.

Wasabi is a preservative. It was used to keep fish fresh in Japan. Because of this they figured out ways of working the flavor into how they ate sushi so that now that it's no longer needed it has become an additional optional flavor.

As others have said, real wasabi is expensive and hard to find. Most wasabi in the world is just horseradish dyed green, even in japan it's used as a cheaper substitute.

You don't have to like it and you don't have to add it.

I've had real wasabi only once. Lots of flavor without the same burn. Very good but nothing that I go out of my way for. I would try growong it if I lived in the right climate.
