I would probably buy gochujang without any other stuff added to it, since you can always add vinegar.

I think you'll like it though. Make bibimbap. It's a great food.

I like to use both doenjang and gochujang when I make stews.

For me it has a plastic taste with no discernible elements. The heat is disappointing. I wound up using it in ramen, soups, stews as >>14953471 mentions.

You can definitely find hot gochujang as well. I accidentally bought it once in face-melting heat level, and it was disappointing cuz it meant I had to put only a little on my bibimbap.

Anyway gochujang is definitely not a condiment, it's an ingredient. Lot that you can do with it.
