pineapple is a bromeliad. The juice of a raw pineapple contains enzymes that break down protein. Cooking it deactivates the enzyme. So when eating raw pineapple it causes sores in your mouth if you eat a lot of it. canned pineapple won't do that because it's cooked during the canning process.

pineapple will tenderize the fuck out of meat and can turn it in to mush.

The kiwifruit actually has the same enzyme in it as well (can't for the life of me remember what it's called atm but you can order it in powder form from the US as it's illegal to have in processed or perhaps even at all in food for sale in the EU if I remember correctly as the enzymes starts or quickens the rotting process which is how it for examples tenderizes meat if you use it in a marinade) which is quite interesting to try out, personally I don't really enjoy the taste of pineapple in food which is why I chose to go with the kiwifruit instead when I was experimenting with some marinade ideas for the grill with some different meats to see if and how much of a difference it made after I first read about it
