Fellow duck anon who just finished culling their excess drakes (same breeds, ages varied from 12 weeks to 18 weeks).
First of all you need a proper killing cone. They are 20 bucks at your nearest farm supply store. Second if you have a good, thick dead tree on your property you can screw it on there, your setup looks wobbly, but I could be wrong.

Third if your drakes are older than 8 weeks I would recommend the water being 155 (up to 160 if they are 18 weeks) and put them under for 90 seconds. I also use a board to slosh them around to make sure the soapy water penetrates their feathers.

Just wondering how you decapitate? Do you stun first? I hope you make sure to sharpen your hatchet before hand. We stun with a 2x4 on the back of the head. A couple times we actually killed them that way before even chopping their head off. Instant kill=no suffering

Finally, do you remove the skin on their feet? What do you use and what do you throw out?

Idk, you could probably fry them, they are mostly just skin and fat. Just make sure to thoroughly wash them beforehand. It's a tiny bit of skin attached to the intestines. If I had hogs they would definitely be going to them.

Hearts are excellent for grilling/frying after marinating. I actually prefer to roast and stew the tough gizzards to get them to be fork tender. Ducks are amazing as a whole for slow cooking. So delicious and flavorful. Much better than supermarket chicken, which in my opinion tastes like cardboard.

Liver is best prepared like any other liver. Unless you gavage the duck, which I wouldn't do since it seems cruel. Though there are breeds that apparently will gavage themselves.

I also plan to cook my lungs like I do my liver, you usually don't get lungs, probably because they are fragile and difficult to remove, and if I was a person who raised poultry "conventionally" I wouldn't feel comfortable selling lung since the animals live in areas with low air quality. But since my ducks are raised outdoors I am more than happy to fry up their carefully removed lungs.

As for the brain, I plan to just cook them inside the skull. I haven't tried duck head before but I ultimately plan to prepare them like the feet and skinless necks. Dry the skin, roast with some melted duck fat on top, then stew in my homemade vegetable broth.
All my "offals" have been organized into separate containers depending on how I want them prepared.

I only just started with ducks (this is my first year with livestock) They get feed that is grown on the farm as well as feed I buy, I also feed them tons of greens from my garden as well as the excess forage they get from their pasture. I also had a neighbor who has a pond who had excess duckweed since the wild ducks didn't show up at his pond this year, so my ducks had a field day with that. They also were wonderful pest control. They loved the Japanese Beetles that tried to eat my hazelnuts, as well as tomato hornworms and cabbage worms. Good ducks. Honestly they don't eat much feed now that they are grown. They will eat half a gallon of feed a day, but aren't too interested in it.

In the future I plan to grow even more feed for them. The ducks love alfalfa and it is easy to grow so there will be a lot of that as well as corn, millet, wheat, etc. I have tons of land and I keep reading about different ways to feed poultry. I am particularly interested in people who 100% compost feed their chickens. That seems nifty.

I thought it would be hard to process ducks, as I had never gutted an animal before, but honestly, after the first couple times I found it... enjoyable? Like I got a sense of pride cleaning out and organizing the guts and leaving the bird nice and clean on the inside. It's gross to watch on video, but irl it's not bad. Once you know what you are doing and are nice and careful you realize it's more of an art. Idk, I think people (especially industrialized westerners) are way too separated from their food, it's a real shame. We have been taught that nature is dirty and we should sterilize everything.

Ducks are less assholey than chickens imo, and both handle captivity the same (though it depends on the breed I guess) the drakes, like roosters will beat each other up and harm females if there are too many. Honestly, based on my experience, you can't really trust what anyone says on livestock unless you raise them yourself. I love my ducks, sure I kill the excess males, but that doesn't change that it brings me joy to care for them and have them in my life. Vegans won't understand because vegans are so afraid of death and suffering that they want nothing to do with animals.

If they are anything like chicken feet (which I eat) you should remove the skin after scalding, then wash the feet when you are ready to use them, cut the nails off (optional), dry them, roast them with oil and salt and pepper, high heat short period of time, then stew in broth. They will be so tender and delicious they will fall off the bone like pic related.

The feet are my absolute favorite part of the bird. They are so underrated.

I would stun first with a 2 by four. I just don't want the bird to feel their head being cut off, because sometimes it takes more than one chop. Also sometimes stunning will kill the bird so they really don't feel their head be cut off.

yeah something like pic related. Hit them on the back of the head. You want them to get really tense afterwards at first then they will go limp. If you kill them they will tense, go limp, then go into their death spasms (you know what I'm talking about). The duck shouldn't make any sounds. If you successfully stun them on the first hit, hold the beak to the board afterwards and then decapitate. If the duck doesn't seem stunned hit them again. It kind sucks but for me if I have to hit them potentially more than once with the hatchet to remove the head I'd rather they be unconscious.

330 grams flour
12 grams baking powder (can use soda)
3 grams salt
60 grams sugar
Mix dry ingredients.
90 grams cold (not frozen) butter, cut into 1/4 inch cubes
mix butter in with dry mix, breaking the butter up until the pieces are pea sized
240 grams fermented oats (I add oats in a jar, fill with water, cover, and let rest for 3-10 days, making sure to stir if the oats rise to the top, then I cook the oats and water until it becomes porridge and save them in the fridge)
add 100 grams milk, fold until just combined (don't overmix or you can lose flakiness)
On a floured surface place and roll out dough until 1 inch thick. Then cut dough out, pressing straight in and out and not twisting (or will lose flakiness).
Grease a pyrex pan or a cast iron skillet. I use peanut oil but use whatever you want. and place in biscuits, I like them nice and snug, but thats just preference.
Brush tops with a beaten egg (optional, but I like it for a golden top)
In a 325-360 oven (depending on how hot your oven is) bake for 10-15 minutes. I like to check every 7 mins.
When browned, take out and cool. Enjoy with butter, honey, and/or homemade jam.

Proper scalding temp is KEY. But I also take my time. Sometimes up to 2 hours per bird. I could cut the time down if I had a plucking machine or duck wax but I just relax, put on an audiobook, get some tweezers, and get to work. I take pride in a clean duck. I even pluck the head. The fine hairs don't bother me too much as they tend to not be visible in the final presentation. But I think also there are sweet spots as to when to slaughter. But idk, it's also luck of the draw, some ducks come out cleaner than others. Sometimes I think they also come out clean due to a very low stress life. No can do. I am grateful for these ducks lives and deaths. When I got these ducks as babies I felt so happy and safe I couldn't stop crying. I didn't sleep the first night they were here because I was so worried about them not being comfortable or getting hurt. I put so much time and effort into my cute ducks, more than most people put into their pets (I am coming from a place of experience as I used to work in pet care). Everything was carefully arranged for them to live the best life, and seeing them experience visible joy, like seeing them on their first day out on pasture and their first swims, meant the world to me. If our roles were switched I would happily give my life to these ducks.

Sure, I killed some of them, but it doesn't change the fact that the relationship I had with them was special. I cant wait until they start breeding, I am getting an incubator and I can't wait for the next generation so I can do this again next spring.

If you don't have the space maybe you shouldn't have animals. I'm a big fan of well designed mobile coops and lightweight electric fencing that you move around your property. This makes sure that there really isnt much to clean other than their food troughs and waterers daily. I haven't needed to clean their newest coop since we set it up. We move it to a new spot daily. It's very lightweight and rigged so we attach straps and carry it where we need it.

But in winter the coop will not be moving and instead of clean fresh grass we are going to have a deep bedding system.
