I said that you shouldn't jam needle nose pliers into a tight fit zip tie because they have multiple relatively sharp edges that can damage or nick cable sheathing and it puts high pressure on the copper which causes strain on the metal. A knife, provided it isn't owned by a retard. is extremely sharp, and usually has a single edge which means you aren't applying significant pressure to the cables and run significantly less risk of nicking/crushing them unless you have parkinsons. I also explicitly specified that side cutters are fine for zip ties and I use them if they're handy.

It depends a lot on blade shape/geometry/whatever bullshit on how easily it'll cut through without fucking your hand the same way it does with shit like wood carving. If you want an actual work knife that isn't some hardware store meme shit look for a thin blade with a full flat grind if possible. It should cut through anything softer than bone like butter, and not in the meme "mah buck knife sliced 1cm into a sheet of paper it'll cut through that like butter" way, if kept sharp. I usually try to carry something under a 4in blade generally don't have any issues with it dulling after sharpening so long as I give it an occasionally touch up.
