The French introduced the dish to the English when the first wave of chefs left for the UK after the French Revolution, so the British adopted that name for it. Why the Americans, with their historically close ties to the French (treachery, betrayal, revolution, cowardice, driving on the wrong side of the road) decided to adopt the Spanish word for it is a mystery.
