It's literally impossible to make good coffee, no matter what I do, I can't make a good cup of coffee. What's the secret? I've just given up for the moment and I make do with blending milk, sugar and instant coffee.

I know that feel.
On the flip side. getting pissed off from failing to consistently get a delicious brew pushed me to drop caffeine for a couple months.
I found out actually, that a lot of problems I was having was actually caused by the caffeine, and I had a better mood without it (after the first couple weeks).

But I like coffee too much to stay away from it forever, so I'm still trying. Been doing it for probably 5 years now and still learning about things I'm doing wrong or what might be causing inconsistent extraction in my processes.

A lot of things have to go right.
We'll focus on the parts you can do.

Coffee - Fresh. Roasted within the last 21 days. Ground within the last 20 minutes. Brewed at the right temperature with good water (this doesn't have to be complicated - filter pitcher).
Use enough grounds - a little too much is better in general.

If all that is crazy hard, try cold brew. Use a mason jar, preground coffee, cold water. 24hours in the fridge. Decant/strain; mix the cold concentrate with hot water when you want a cup.

Yeah, people don't realize that caffeine is energizing but after a while it can actually do the opposite as it's constantly pushing your body to work harder and sometimes you need a break from that. If you're going to have caffeine every day you're probably better off with some kind of tea in smaller amounts and only occasionally having more stronger drinks less often.
