move to nyc and extern at a michelin starred restaurant, or get a job as a prep cook.

then, once you've moved up to working the line, make your way through all the stations. Befriend everyone, connect with everyone, learn EVERY station, including pastry.

After you've made it through all the stations and have earned your status as a tournant, make your way over to another reputable place, preferable another place with 1-3 michelin stars, and do the same thing.

Once you've worked at a MINIMUM of 3 restaurants, and you've made your way through all the stations at said restaurants (this will take between 3-6 years), try to earn a position as a jr. sous, and then eventually a sous chef.

Once you've been a sous for a few years, make your way up to Chef de Cuisine. Once you've hit CDC status, you're set, unless you want to own multiple places or have your own restaurant.

hit up old rich regulars and score yourself some investors (i recommend young tech/finance bros or people in the liquor/cigar industry. those guys are BIG money most of the time. celebs are also v helpful.) Get your money, and get people you trust, SPECIFICALLY an Executive Sous Chef (your right hand person), a GM you can trust, an accountant, a lawyer, and someone for HR.

Get a spot for your restaurant, and then bada bing bada boom your 20% of the way there pal

Most of the dishpigs near me are from East Timor. That being said Jonas (ex kitchen porter) now flips burgers, he got the job by saying he worked in a kitchen, but did not say what job he did. Tells his folks back home that he is a chef.
