well for starters china has a bunch of different cuisines with a good bit of variety. American most resembles Cantonese, since most migrants came from there when chinese restaurants were established here (though real cantonese features more sour dishes and more weird meats and offal, and would feature rice noodles rather than wheat)

In general real chinese cuisines have a wider variety of meat, less meat, more vegetables, vegetables found in china (no western broccoli for starters), less breaded things but more dumplings/similar

Char siu (~barbequed, literally "fork roasted") is definitely the standardised name for the kind of cooking they use on the pork that goes into the buns. That absolutely doesn't mean they're the only names though lmao, just the standard one. Roast pork is probably just the way they decided to translate it.

Dim sum is the kind of Chinese meal where you sit down and order a bunch of small things which can all be eaten in one or two bites. Dim sum pretty much just means "snack". AFAIK dim sum is the only kinda restaurant which has the trolley lady thing but that might just be in London.

haven't eaten it in years. but yeah of course. it's specifically concocted to be liked and enjoyed on a fundamental, basal level. it's got a lot of variety. lots of different flavors. very good.

I traveled to yangshuo when I was younger, the town market was kinda split between meat and veg. Most of the meat was either dry or live, like fish were all live in plastic tubs, or it was cured, not much if any refigeration, they had frozen good but just at different stores, none at the market. I remember seeing dogs there, they were live in cages, but they were crammed in like as much dog as you could phisically fit in the cage. They would kill the dog for you, cause up the back there was a butchery area with all the blood running down the floor. The dogs were all snarling and unhappy. They didn't look cute. They were all a particular breed, you'd see normal pet dogs every now and then on the streets, but not as many as like in germany. You'd never see the meat dog breed out as a pet, they were only in cages. the other meat that I saw that was unusual to me was piles of dried rat, they were spatchcocked and stacked up, like flat rat jerky.
