I'll start; panko bread crumbs, caramelized onions, honey ham, smoked paprika. My favorite way to make mac and cheese is to bake it with a sort of egg sauce like a carbonara that ends up binding the noodles together, THEN pouring warm cheese sauce over the crispy panko and parmesan topping.

i make an 10-cheese baked mac and cheese. i usually add caramelized onions and a little bit of sugar to enhance the caramelized flavor. smoked paprika, parsley, chili powder, salt, neufatel cheese or cream cheese, crema, and eggs. I make a cheese sauce, and also save enough cheese to mix in and put on top as well.
