I'm working on making a good Asian-style clear noodle soup. Getting a flavourful broth which isn't overpoweringly mushroomy isn't the easiest. And obviously the broth has no body because of lack of gelatin.

Aside from that, I've been doing lots of stir fries, roast veg, curries, and using more ingredients that I used to when I cooked meat. So even if I'm not permanently vegetarian, its been a cool experience trying new things.

what do you do with the vegetables after doing the broth ? They don't really taste like much imo
