As for wine grapes, two key aspects are a relatively high sugar content and selectively dropping (throwing away, you can see what I recently dropped in pic) underdeveloped bunches. Generally, grapes grown on hillside terroirs are more flavorful. Mine are on flat ground though

Most wine on store shelves is designed to be drunk within 2 or 3 years of sale, having already been aged or being known to probably not age well.
I'd recommend buying at least two bottles of whatever you're thinking of aging, and drinking one over the course of two or three days.
If its quality stays consistent or slightly improves in that time, the wine will probably continue to age well. If it turns into vinegary dogshit after a day or two on the table, best to drink it soon.
Also, the more tannic, acidic, and alcoholic a wine is, the longer it's likely to age well.
