so the way I learned it was 1:1 by volume
1 cup plus 1 cup and three eggs (chicken)
a duck egg is bigger but I’ve found 1/2 cup of flour per egg creates a nice dough and if it’s too wet it can be worked with a little more bread flour
there’s nothing worse than trying to hydrate dry pasta dough you might as well start over

Check your local laws regarding farm animals and zoning. My township in the burbs allows you to keep up to 6 hens or ducks for egg laying for non-commercial. This should be stressed in a big way. Their water requirements are greater than chickens too because they like to swim. And they will make their pond nasty in a hurry. Ducks also tend to be less tolerant to extreme heat, and because of their large webbed feet should have plenty of straw to walk in when it’s freezing to prevent frostbite. Ducks have better personality over chickens but they’re substantially more work. There’s a reason chickens are farmed on an industrial scale and ducks not do much.

best guess is that they’re swedish crested, because of their silvery grey feathers and crest on top of their heads

Only time separation is important is for chicks with their brooding mothers. They obviously can't tolerate cold weather as well and need access to food and water.
