If I recall correctly the reason dairy is placed the way it is has to do with being able to replace it without taking it out of the cold environment. The milk at least. Can't speak for cheese and such but in every store I've been to dairy has either been right next to the storeroom for it or there has been an area behind the dairy they can use to restock it without needing it to leave the environment.

Also you forgot the obvious one of having small cheap items at the front of the store and having cheap sweets and drinks at checkout. People are more likely to spend more or buy more things after they make their first purchase and its an effective way to sway people who are "just looking" as once they are going to the register the odds of them buying more than just the small item increases exponentially otherwise it isn't worth it in their minds and they aren't putting the small shit back.

I bring a shopping list and stick to it. I am not so weak of mind that I will get tempted to buy sweeties 'because they are their in front of me'.
