About 40% of american adults are obese, and that stat sits at around 30% for the UK, canada, and australia.
Is a large portion of the population being fatter and sicker than they should be simply going to stay the norm forever or is there anything that could radically shift people's overall attitude towards food for the better?

Fat shaming. Fat shaming to the extreme. Fat shaming or a tax like cigarettes or perhaps a yearly weight and BMI analysis where your taxed for being fat. No education will work for the majority and in a world of "acceptance" if it gets so bad most can convince themselves it doesn't matter that they are going to die on the slab in their early 50's or late 40's.

not directly on topic, but I've also read a lot of anecdotes of nurses half crippling their backs due to strain from having to periodically turn over or clean obese patients. they need like teams of 5-6 at a time to successfully turn over a big one. some hospitals have heavyweight machinery installed to do the turning over, now

i'm not confident that the west can tackle these problems
my local chinese takeout place can consistently crank-out meal after meal with zero mistakes after years of patronage, but the best we can do is feed our kids prepackaged food?
imagine if we did something practical like put rice cookers and wok burners into schools, and hired people who could manage the kitchen successfully
i can get a stir fry, rice, egg roll, soup, crackers, utensils, and condiments for $7, and it's ready in 5 minutes
and it's loaded to the tits with cabbage, zucchini, broccoli, carrots, whatever
sure, it's high in sodium, but that is easily remedied
that's the efficiency of the east
what we call "fast food" in america is neither of those
cafeterias cooking real food would, sadly, spawn numerous law suits
parents would be angry that their kids aren't being served chicken nuggets and cookies, and they wouldn't trust the qualifications of the cook
but somehow a factory making chicken patties and freezing them and distributing them in boxes for minimum wage cafeteria workers to reheat in ovens is just fine
you have to defeat ignorance, lawyers, culture, and none of that is easy
