I like tuna melt sandwich as a light meal when working from home however they could do with spicing up a bit. How do i do this?

My current recipe -
can of good quality tuna chunks
red onion
mayo
sourdough or wholemeal loaf
slice of cheddar
salt and pepper

fine chop the red onion and mix with the other ingredients, lightly toast the bread then add the tuna mix, toast it under the grill for a couple of minutes then add the slice of cheese and give it another couple of minutes. It's quite nice but somewhat lacking. How do I improve it?

Add dill relish to the mix. If you hate pickles, add celery. Mustard is also good to mix. Cayenne is also good to mix. Hot sauce is also good to mix.

Anyway, I like onion powder in my tuna, although maybe the red onion is enough. Celery salt could be good too.
Since you’re using cheddar, you might be able to add some american cheese or just some sodium citrate to make it melt better.

You can quick pickle your red onions with a bit of sherry vinegar; maybe go 50/50 pickled and unpickled.

Replace a bit of sour cream for your mayo, a 1:2 ratio, respectively. You can also add soft cheeses in your tuna salad as well, shredded of course.

Top with your hard/semi-soft cheese and broil it.

Hope that takes your tuna melt up a level.

Dill relish (not a sweeter relish) or diced up baby pickles (whatever people call the 1.5 inch long tiny ones), capers, celery is there partially for the texture and to help fill out the mix are all good suggestions.

Man, drained tuna, drained giardiniera, touch of mayo, touch of Grey Poupon salt and freshly cracked pepper has changed my life. Technically a gherkin is a specific variety of cucumber and not all tiny pickles are from that variety so while they are likely gherkins it isn't 100%.

Make sure the cheddar is tangy.
Instead of toasting and grilling, fry it in a pan with butter (butter the outside of the bread before placing in the pan). Squash it down with a spatula whilst frying. Do this hot, but not too hot so the cheese melts before the bread cooks.

Firstly, cheddar needs to be deli American slices, full stop. Only way to achieve melt god-mode.

Second, your tuna recipe needs help. Dukes mayo, finely chopped dill, one lemon wedge squeezed, red onion, salt and tiny bit of pepper. Chop up tuna a bit (you want some larger chunks and some smaller chunks) then mix in all of those ingredients I listed.

I like putting it on a sourdough english muffin open faced, but your two bread choices aren't necessarily bad.

OK bud just mix the tuna with the mayo diced carrots green onion and lemon rind...yes scrape the skin from a lemon then mix it....then you need tillamook cheddar and some sourdough bread
