You place the slices of cheese on top of the mound of sliced beef and onions on the flat top, and as the cheese partially melts, you use it to help hold together the other ingredients together as you scoop it into the bun with your spatula.

With cheese wiz, you get none of that structural element, and a bunch of the meat and onions end up getting left behind on the flat top.

native philadelphian here. wiz is a trick the tourist trap spots use to increase their margins since processed corn oil and orange food dye is cheaper than actual cheese.

provolone and white american are both acceptable, but cooper sharp is the real chad cheesesteak cheese (it's like a dank sharp american/jack for those who have never had the pleasure). the best cheesesteak in philly is at joe's in fishtown in my opinion if you're happening through any time soon.

italian roast pork with broccoli rabe and provolone is also the real chad sandwich, and the best one of those can be had at john's roast pork on snyder avenue.
