I love them but they hold up the worst out of any greasy fried food. With onion rings or fries I can enjoy them for at least a good 15 minutes but I swear I get half that before the breading separates with fried pickles. Maybe it has to do with the moisture content?

Man, I wish I had the culinary background to explain what chemical process happens when you deep fry pickles that adjusts the flavor.

They are still generally "wet" because of the moisture that is trapped inside but I would probably suggest placing them on a paper towel before applying a coating (I usually make them at the end of a batch of tempura with the same batter/panko) as excess moisture at the surface will instantly hit boiling temp and make the oil go crazy.

The salt is still there. The flavor in general is more of a pure pickle flavor and less straight salt. I would definitely suggest something closer to a dill pickle than something sweeter like bread and butter because the cooking process takes some of the edge off already..

If you like pickles, you will likely love them fried.

It's a good thing to experiment with when you already have a bunch of the work out of the way already. First time I ever did it I just took a couple spears and treated them the same way I did the zucchini that I was doing at the same time. Turned out great, worked well plain or with ranch/ponzu and I've just been experimenting with them since.

Need to get them from the right place. There's a bbw place that does it good, they include fried peppers to. Nice and crunchy, with some dill and green onions sprinkled through it. They serve it hot and in huge piles. And with their house made ranch. Always order it when I go there, if I go with family I order at least 2. They go fast

Additional note for anyone who tries this. Since pickles are high in fluid content they can store a large amount of heat from being deep fried. The chip versions probably let that heat off more easily than a spear. Depending on how big a piece you use you might want to give it a sec to cool off.

>freeze finished chips for 30-60min then fry at 350 until deeply golden brown
