If your paranoid you can buy eggs that have been "pasteurized" in shell so the risk is negligible. It's really not that common for eggs to have salmonella. That happens if the chicken is in poor health. If you buy from the store look at the julian date; know though that's packed, not laid date.

get eggs from a local farmer or get pastured (free roaming not necessarily free range) chicken's eggs. battery eggs are the only ones unsafe to eat raw. Vital Farms has great eggs.

The salmonella egg meme is from decades ago before it became standard practice. Fresh local eggs are kino and worth the risk though. The single most important factor in eggs is freshness.

Cook mushrooms in medium-high heat stirring from time to time to prevent burning. On the meantime, crack an egg and separate the white from the yolk. Keep the yolk ready.
