It absorbs oil (and thus oil-soluble flavors) so you can get very savory slabs of meaty vegetable which by itself can still have a nice and delicate flavor.

<1 inch cubes, briefly pan fried with minimal oil will have a sweet, floral, but very slight savory taste. It should be tender but mostly hold its shape, then almost melt in your mouth. Extra seasoning is unnecessary.

A family recipe is to do this, but with slices instead of cubes. Then add crushed tomatoes and simmer together, gently moving around to stir. Finish with fresh basil and serve with garlic yogurt on the side.

I really hate the stupid zoomer pictograms and your OP picture made me angry for no reason.

I've never eaten eggplant before and have no clue about what it is. Is it like squash?

The bitterness is being bred out of them... along with the flavour.

Same thing happened to radishes.

Eggplants are too large. I cook only for myself. If I wanted to add egplant to a dish, I'd either have to make it the central ingredient or keep half of it for another time. I wish eggplants were half the size.

There are different varietals that are smaller, you know? Not all eggplants are the giant purple ones.
