im a prep cook.
cutting them efficiently won't give you enough time to get onion gassed. however doing something like 5 gallons of sliced onions takes time. what i do if i have to use a deli slicer on onions for 5 gallons of onions is i'll remove the skins and place them in a metal pan in the freezer for 30 minutes. then when im ready to get around to my onions slice as fast as possible. the freezer helps but not completely so speed is still a factor. if they're cold enough and you do it fast enough you won't cry. for the home cook that only has to deal with one or two onions at a time just get good at picking out fresh onions and your knife skills and crying won't be an issue.

the cold technique + speed works though. i have, however, known people dealing with higher volume than me to have specific onion goggles. you shouldn't be dealing with crying doing julienne, dice, brunnoise that kinda shit. the only time i see people crying from onions is when they either arent using a knife but a machine, the onions are ridiculously old, or they are abysmal with their knife skills.
