Chicken and bean stew.

Cut 1lb of chicken breasts into cutlets and then salt, pepper, and lightly dredge in flour. Cook in a bit of oil over medium high heat for ~3 minutes a side until well-browned and cooked just-through. Remove and set aside.

In the same pan, add a couple of sausages that have been quartered lengthwise and then chopped into a dice (I used some chicken andouille this time around) and drop the heat to medium. While those fry off a bit, dice an onion and several small sweet peppers (or a couple of large bells) and add them to the pan. Cook until tender, then add 3-4 cloves of garlic, diced. Sprinkle in a couple of teaspoons of flour and cook for ~2 minutes until nutty. Add a couple of cups of chicken stock, some drained and rinsed cannellini beans (I used two cans), some dried herbs, and a couple of spoonfuls of sambal oolek. Bring to a simmer and cook on med-low for ~10 minutes.

Cut your chicken up into bite-sized pieces and get ready to re-add them. Roughly chop up half a bag (5-6oz) of arugula, just enough so they aren't long strings when they wilt. When the beans are tender and you're happy with the flavor, re-add your chicken and arugula and stir until wilted.

Goes pretty great with a nice crusty loaf of bread, but not required.
