I grilled a bunch of chicken legs after marinating them for 24 hours in soy sauce, honey, onion, cilantro, five spice, garlic, and ginger. Twenty five minutes and flip for twenty five more minutes off heat. Turned out damn tasty.

I love the leg thigh quarters. I have 20 legs in the freezer because I've been marinating the thighs in a tasty marinade.
soy, water, onion and garlic powder, cumin, salt, pepper, brown sugar, chili powder that I toasted and ground. and a little bit of liquid smoke.

You don’t need to marinate chicken for 24 hours, and you shouldn’t use marinades that have sugar in them, they will burn at searing temperature. Next time brine the chicken, then season with a dry rub (I use salt pepper onion garlic smoked paprika) and sear the fuck out of them with your grill at maximum heat. When they’ve seared, transfer them to portion of the grill with indirect heat and baste with olive oil and and an acid like lemon juice or soy sauce to keep them moist and tender. Flip / turn every 5 minutes and in the last 10-15 minutes of cooking start basting your sugary sauce. Wa la

I'd be careful, too much and the sugars will start to burn
